We make this constantly for all ages, college students to seniors to pre-school.  It's quite fun and great tasting.  Use Ben and Jerry's recipe, you can't fail with that.  2 qt heavy cream, 1 qt half and half, 1/3 cup sugar, and whatever chocolate/things you want to add in.  I usually use oreos smashed up - you can get all flavors of oreos to change the flavor of the ice cream, and I also usually add one bottle of choc. syrup since I love chocolate in everything.  Kids love it - can't go wrong.  Brownies and banana is quite good too ;)


Biggest hazard is simply splashing of liquid nitrogen.  You sometimes get a layer of liquid sitting on top of the ice cream, and if you stir a bit vigorously it can splash out, depending on your bucket.  When I do it I have the kids sit far behind, because their impulse is to come up and look directly in the bucket.  So as long as they stay behind the 5 Gauss line all is good ;).

I have a colleague who's interested in making liquid nitrogen ice cream as an outreach activity and he asked me about safety/risk implications. Does anyone have any experience with this from a risk assessment perspective?
