Hi Jack,
I am not aware of any studies - and would be interested if anyone does one!
As someone experienced with organic and polymer synthesis, I do prefer using the side-to-side sashes for the following reasons: (i) I can close the sash openings to smaller dimensions, (ii) I can reach things and manipulate items more easily through the vertical sash openings than I can through the horizontal sash openings, and (iii) I can more readily have a pane of glass between me and the experiment by placing that in front of me and reaching in around the sides.
We do measure face velocities for both horizontal and vertical where I work and the numbers come in reasonably close to one another.
